Zesty hot cross buns

Enjoy a traditional spring favourite and make your own hot cross buns. By baking them yourself you get to enjoy them fresh, whilst reducing additives and experimenting with your own flavours!

Ingredients list

(Makes 10)
Preparation Time: 90 minutes
Cooking Time: 15 minutes

  • 250ml milk
  • 50g caster sugar
  • 400g bread flour
  • 1 tsp cinnamon
  • 2 tsp mixed spices
  • 60g butter
  • 150g raisins
  • 1 orange, zested
  • 1 egg, beaten

For the topping:

  • 50g flour
  • 50ml water

For the glaze:

  • 2 tbsp orange marmalade


Warm the milk in a bowl, then whisk together with the sugar until all of the sugar has dissolved. Place to one side.

In a separate bowl sift the flour, cinnamon and mixed spices. Rub in the butter to form a breadcrumb like consistency. 

Add the raisins, orange zest, beaten eggs and milk to the flour mixture and combine into a dough. 

Knead the dough until smooth and elastic before transferring to a lightly oiled bowl. Cover with cling film and leave to prove for 1 hour.

Remove the dough and divide into 10 equal portions before kneading into buns.  Place onto a baking tray and leave to rise whilst preparing the glaze. 

Whisk together the flour and water. Transfer into a piping bag and pipe a cross onto the top of each bun. 

Pre heat the oven to 200°C and place the buns in the oven for 15 minutes until golden. 

Remove from the oven and immediately brush with the warm marmalade. 


Healthy swaps

Why not experiment with other spices and dried fruit in your hot cross buns.  

Vegan alternative: swap in dairy alternatives for the butter and milk. Eliminate the eggs and replace with 7g of fast acting yeast.
