White chocolate, raspberry and pistachio mousse

Raspberries, pistachios and white chocolate all come together to make this delicious dessert.

Chocolate can provide pleasure and give our mood a little boost and this isn’t just due to the great taste! When we eat chocolate there is an increase in endorphins released in the brain which makes us feel good.

Ingredients list

(Makes 4 servings)
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Refrigerating Time: 4 hours

  • 110g white chocolate
  • 110ml whipping cream
  • 2 large eggs
  • 120g frozen raspberries
  • 40g pistachios, crushed


Separate the eggs into two cups – yolks in one, whites in the other.

Place the white chocolate in a heatproof bowl over a saucepan of water (make sure the bowl isn’t touching the water) and bring to a simmer.

Melt the chocolate, stirring regularly.

Once melted and smooth, allow to cool slightly before adding the egg yolks and stirring thoroughly.

Whip the cream until thickened and then fold in the chocolate mixture.

Beat the egg whites in a separate bowl until the mixture becomes frothy.

Fold the egg whites into the chocolate and cream mixture.

Line the desert dishes/ glasses with a layer of raspberries on the bottom.

Distribute the mousse mixture evenly into the dishes and place in the fridge for 4 hours.

Serve with a topping of crushed pistachios.

You could also try using alternative fruits - blueberries and strawberries work great too!
