Herby leg of lamb

A delicious centre piece, alongside an abundance of vegetables or even to accompany a salad, this tantalising roast leg of lamb won’t disappoint!

(Makes 6-8 servings)

Cooking Time: 1 hour 40 minutes

  • Leg of lamb (around 1.5kg)
  • 2 red onions, sliced
  • Olive oil
  • Salt and pepper
  • 4 rosemary sprigs
  • 3 garlic cloves, sliced
  • 4 thyme sprigs

Method

Heat the oven to 225° C.

Place the onions in a large roasting tray.

Remove any string and place the leg of lamb on top of the onions.

Rub the lamb with olive oil and season with salt and pepper.

Pierce the lamb all over with a sharp knife to make slices in the lamb, about 2 inches apart. Push rosemary and garlic into the slots.

Sprinkle thyme over the top and place in the oven. Cook for 25 minutes.

After the 25 minutes, turn the oven temperate down to 180°C and cook for a further 115 minutes.

Remove from the oven and leave to stand for 10 minutes before slicing.
