Butter bean and chorizo stew

This hearty stew is one to feed the family with just four ingredients. It also provides us with a big helping of fibre and protein to ensure we stay full.

Nutritional highlights

The butter beans in this dish are providing us with a lot of fibre as well as some protein. Whilst they are mainly carbohydrates and protein they are also packed with some important nutrients like iron, zinc and magnesium which are all found in meats. They are rich in B vitamins namely thiamine, folate and riboflavin which are necessary in turning carbohydrates into energy which helps fuel us through the day.

Ingredients list

(Makes 4 servings)
Preparation Time: 5 minutes
Cooking Time: 15 minutes

  • 200g chorizo
  • 2x 400g cans of chopped tomatoes
  • 2x 400g cans of butter beans
  • 1 tub of fresh pesto

Method

Cut the chorizo into chunks and put into a large saucepan over a medium heat.

Fry gently for 5 minutes or until the chorizo starts turning dark brown.

Add the tomatoes and butter beans, bring to the boil then simmer for 10 minutes.

Swirl in the pesto and ladle into four bowls to serve.

Top tips

You can get pre-cut chorizo to save some prep time and put straight into the saucepan.

Why not add in some extra beans or pulses to help fill out the meal even more.

Try adding in different herbs or spices like parsley and paprika.
