Diabetes friendly frittata cupsv2.jpgA great way to use up a variety of vegetables and packed with protein, these frittata cups are a great way to start the day.

 

 

Ingredients (Serves 1)

  • Splash of oil (coconut or olive oil)
  • 1 egg
  • 1 garlic clove
  • Vegetables of choice (kale, grated courgette or carrot, pepper, onion, spinach all work great).
  • Sprinkle of herbs/spices.

Method

Preheat the oven to 180C. Lightly grease a muffin tray with oil.

Whisk the egg together with a splash of water and any herbs/spices of choice.

Fold in your chosen chopped vegetables and mix well. Fill the muffin tin until ¾ full then bake for 10-20minutes until the eggs are set in the middle.
