A delicious Asian inspired soup...

A great deal of our daily requirement for water is needed for the digestion and the elimination of waste products from the body, so achieving good hydration by drinking plenty of water and eating high water content meals like soup can help prevent constipation. This soup also includes rice noodles, which are gluten free and so are gentle on the gut lining, and chicken which is easy to digest. The chickpeas, spinach and other vegetables provide plenty of fibre and essential nutrients for good gut health.

Ingredients (Serves 4)

  • 1 tbsp of olive oil
  • 200g chicken pieces
  • 1 tsp of Chinese 5 spice
  • 1 tsp of ginger paste
  • Pinch of chilli flakes
  • 2 spring onions, chopped
  • 200g of tinned chickpeas, drained
  • 1 red pepper, chopped
  • Juice from 1 lime
  • 250g spinach
  • 250g fresh rice noodles
  • 1.5l chicken stock


Heat the oil in a large non-stick deep pan and add the chicken pieces, 5 spice, chilli flakes and ginger and cook for a few minutes until the chicken is sealed. Add the spring onions and pepper, season with some black pepper and cook for a further 2 mins. Add the stock, chickpeas and lime juice, bring to the boil and allow for it to simmer for 15 mins. Finally, add the spinach and rice noodles and cook for a further 5 mins until the spinach has wilted and the noodles are warmed through.
