Pancakes for breakfast anyone? Kick start your day with this fun pancake recipe that is sure to prepare you for whatever the day has in store.

Pancakes don’t have to be for just one day of the year (Shrove Tuesday). This twist on a sweet treat actually makes for a healthy breakfast to start your day. As well as contributing to your 5 a day (which only around 29% of the UK are achieving), bananas are a great source of potassium which plays an important role in regulating muscle contractions and nerve signals, particularly in association with heart health. Raspberries offer a sweet taste along with a boost on those antioxidants to keep your immune system fighting fit.

Banana and raspberry pancakes

Ingredients list

(Makes 1 large pancake)
Preparation Time: 4 minutes
Cooking Time: 5-7 minutes

  • 1 large banana
  • 1 large egg, beaten
  • 25ml milk
  • 1tsp olive oil
  • 80g raspberries
  • 1tsp desiccated coconut


In a bowl, mash the large banana using a fork.

Mix in the beaten egg and a splash of milk.

In a large fry pan, heat the olive oil over a medium heat.

Add the pancake mixture and cook for 2-3 minutes on each side, until golden brown.

Serve topped with raspberries and desiccated coconut.
