Strawberry, avocado and pine nut salad

A refreshing summer salad packed full of creamy avocado, sweet strawberries, crunchy pine nuts and a tart balsamic vinaigrette.

Not only is it the perfect time of year for strawberries with them being in season and Wimbledon on the horizon, strawberries are also a great source of vitamin C and antioxidants, which help to boost your immune function. Avocados are rich in potassium and healthy unsaturated fats, both essential to a maintaining a healthy heart. Ingredients list

(Makes 2 servings)
Preparation Time: 10 minutes

• 3 cups green leaves (spinach/ mixed leaf salad)
• 10 strawberries
• ½ avocado
• 40g pine nuts
• 1 tbsp balsamic vinaigrette

Method

Rinse the leafy mixed salad before laying as a bed on the plate.

Cut the tops off the strawberries and slice into quarters.

Carefully prepare the avocado by removing the outer case and slicing into strips.

Add the strawberries, sliced avocado and pine nuts onto the bed of salad before drizzling with balsamic vinaigrette.

Serve smaller as a side salad or make it a main by having a larger portion or bulking up with a protein based food such as grilled chicken.
