Smoked salmon and broad bean salad

This delicious salad offers a healthy lunch when you are on the go or can even double up as a great light evening meal. With little prep and cooking time required, remember that not all tasty, healthy food requires long shifts in the kitchen!

Ingredients list

(Makes 2 servings)
Preparation time: 10 minutes
Cooking time: 5 minutes 

  • 250g broad beans
  • 200g Smoked salmon
  • 1 red onion (diced)
  • ½ a Cucumber (sliced)
  • Balsamic glaze
  • 100g Mixed leaves
  • Lemon wedge

Method

Bring a pan of water to the boil and cook the broad beans for 4-5 minutes.
Drain and rinse under cold water.

Rinse the mixed salad leaves and add to a bowl along with the sliced cucumber, red onion and broad beans. Toss well.

Slice the smoked salmon and serve on a bed of salad drizzled with a balsamic glaze.

Squeeze a wedge of lemon over to finish and add extra freshness, and enjoy!
