Parsnips are at their peak in the autumn months and combined with some aromatic curry flavours, these tasty root vegetables can be transformed into simple delicious snacks.

Ingredients (Serves 4)

  • 3 parsnips
  • 1tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp turmeric

Method

Start by preheating the oven to 160C and lining a tray with baking paper. Thinly slice the parsnips into ribbons - you could use a vegetable peeler for this if you have one. Add the parsnips ribbons to a small mixing bowl and drizzle with oil, ensuring they are evenly coated. In a small bowl, combine the spices then sprinkle over parsnip ribbons. Space out onto the prepared baking tray. Bake for 20-25 minutes until crisp. Allow to cool and store in an airtight container for up to 1 week.

N.B. Ensure to turn regularly to avoid edges burning.
