What is it good for?
Very good for skin health and a fantastic recovery breakfast after exercise.
Eggs are the perfect breakfast food. A very superior source of protein, minerals, choline, lutein and all manner of goodies. For a long time they have been branded as baddies, but now they are quite rightly known as dietary heroes!
Ingredients (Serves 1)
- Splash of vinegar
- 3 eggs
- 75g Organic butter
- Juice of ¼ Lemon
- 1 wholemeal English muffin
- 4 slices of smoked salmon
- Sea salt and black pepper
Bring a saucepan of water to the boil and reduce heat so the water is barely bubbling and add the vinegar. Crack 2 of the eggs (one at a time) into a cup then slide them gently into the water and poach for 4 minutes.
Make the hollandaise sauce. Melt the butter in a small pan. Put 1 egg yolk and the Lemon juice in a blender. Once the butter has melted, process the egg and lemon juice on a slow speed to break them up. Add the melted butter small amounts at a time. Once all the butter has been added increase speed and process until thickened and season with salt and pepper.
Meanwhile toast the muffin. Place 2 smoked salmon slices on each side of the muffin. Top each one with a poached egg and smother in the sauce.
