They are low calorie and contain potassium which can control blood pressure and vitamin C to boost your immune system. Garlic and basil has been shown to help control blood sugar. If you also have high triglycerides and low HDL levels, Walnuts contain Omega-3 fatty acids which can help lower triglycerides and raise HDL.
Into a bowl combine the halved tomatoes, thinly sliced garlic, torn basil, walnuts and olive oil. Allow to stand for 10minutes. Thinly slice courgette lengthways and then cut into strips to resemble pasta. Add to tomato mixture and toss to combine.
