Diabetes friendly super seedy cereal

As easy as cereal to pour out and enjoy, and with minimal preparation time even when made in batches. This recipe is packed with fibre as well as a little natural sweetness from fresh fruit.

Ingredients (Serves 1)

  • 2 tbsp almonds
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp unsweetened desiccated coconut
  • 100ml milk (almond or skimmed)
  • 75g fresh berries (blueberries, raspberries or strawberries are great choices)


This recipe requires a quick 5 minute soak, perfect to make before you hop in the shower or while you commute to work. The base mix can also be made in a big batch and stored in an airtight container, so just like cereal, on the day it just needs to be mixed with milk.

For the base mix, simply mix the almonds, seeds and coconut together (this can be stored in an airtight container for up to 3weeks). When ready to enjoy, scoop out 5 tbsp of the base mix and pour over the milk. Then stir until well combined and allow to soak for 5 minutes. Top with your favourite berries and enjoy!


  • Swap the almonds for another nut of choice.
  • Swap hemp seeds for pumpkin or sunflower seeds for more texture and bite!
