Diabetes friendly salmon veggie bowl

This meal is a great idea for those who want to balance blood sugar by reducing carbohydrate intake.

If you also have high triglycerides and low HDL levels, Salmon contain Omega-3 fatty acids which can help lower triglycerides and raise HDL.

Ingredients (Serves 1)

  • 1 salmon fillet (cooked)
  • 1 carrot (shredded)
  • 1 beetroot (sliced)
  • ½ courgette (shredded)
  • ¼ onion
  • 1 tbsp. balsamic vinegar
  • 1 tsp capers (if desired)


Shred the carrot and courgette using a grater into a bowl. Add the sliced beetroot, chopped onion and mix with the balsamic vinegar. Top with cooked flaked salmon and capers.
