Diabetes friendly orange & cinnamon porridge

This recipe is a great alternative to shop bought porridge. It contains only the natural sugars found in fruit and milk and can be kept in an airtight container for a couple of weeks until you are ready to enjoy it!

Ingredients (Serves 6)

  • 100g hazelnuts
  • 100g dates
  • 200g dry oats
  • 2tsp cinnamon
  • Zest of 1 orange

Method

There are two stages to this porridge; the first is the preparation of the porridge mix - which can be stored into an airtight container for a couple of weeks. The second stage is when you are ready to eat!

Start by placing a dry pan (no oil) onto a medium heat. Add the hazelnuts and toast for a few minutes. Using a food processor, blitz the toasted hazelnuts with the dates, cinnamon, orange zest and half of the oats (100g). Tip into an airtight container or jar (one which you can store it in). Add the remaining oats (100g) and mix together. You can keep this porridge mix in an airtight container for up to 2 weeks.

When it comes to eating, add 1 serving to a medium saucepan over a medium heat with 200ml milk. Cook for 3-6minutes, stirring regularly until all the milk has been absorbed and it reaches porridge consistency.

*Alternatives*

  • For a more decadent breakfast, swap the cinnamon for cocoa powder (chocolate, orange and hazelnut make a great flavour combination).
