Diabetes friendly Moroccan cauliflower salad

Ingredients (Serves 1)

  • 150g cauliflower florets
  • 1 tbsp. olive oil
  • 1 crushed garlic clove
  • 2 spring onions
  • 1 tsp ground cumin
  • Chili (to taste)
  • Juice of half a lemon
  • ¼ pomegranate
  • 25g raisins


Put the cauliflower florets into a food processor and pulse until it looks like rice. Heat the oil in a pan and add the sliced spring onion, crushed garlic and chopped chili (if desired). Add the cauliflower and cook gently for 5 minutes. Add cumin, lemon juice and raisins. Cook for a few minutes then serve topped with pomegranate seeds.
