Diabetes friendly eggs and tomatoes

Packed with protein, this is a great one pot breakfast or brunch recipe.

Ingredients (Serves 1)

  • Splash of oil (coconut or olive oil)
  • 1 tbsp. chopped onion
  • 1 garlic clove
  • ½ bell pepper
  • 1 tsp paprika
  • 100g chopped tomatoes
  • 2 eggs
  • 2 handfuls spinach


Make the tomato sauce by frying the chopped onion in a splash of oil over a medium heat until softened. Add the crushed garlic, chopped pepper and paprika and cook for 2 minutes. Add the chopped tomatoes and 100ml water and stir. Bring to the boil then reduce the heat and simmer for 5-10minutes. The tomato sauce should reduce slightly. Stir in spinach and cook until wilted. Make 2 wells into the sauce with the back of a spoon and crack the eggs into them. Cook for 4 minutes with the lid on for set whites and runny yolk.
