Diabetes friendly asian salmon salad

A low carbohydrate salad, full of the good cholesterol boosting fats.

Ingredients (Serves 1)

  • 1 salmon fillet (cooked)
  • 50g bean sprouts
  • ½ bell pepper
  • 2 spring onions
  • 1-2 handfuls baby spinach
  • 1 tbsp. soy sauce (reduced salt)


In a bowl toss together the baby spinach, beansprouts, pepper sticks and chopped spring onion. Top with cooked salmon then drizzle over the soy sauce.
