Diabetes friendly apple muesli

This recipe is a great alternative to shop bought muesli or granola. It contains only the natural sugars found in fruit and milk and can be made the night before for a quick-on-the-go breakfast.

Ingredients (Serves 2)

  • 15g chia seeds
  • 15g flax seeds
  • 30g pumpkin seeds
  • 30g sunflower seeds
  • 60g mixed dried fruit (raisins, goji berries, cranberries, apricots)
  • 200ml milk
  • 1 apple (grated)
  • 50g low fat yogurt


This recipe is best when it is made the night before. Into a medium sized bowl or container, add the flaxseeds, chia seeds, pumpkin seeds, sunflower seeds and dried berries. Mix together, and then add the milk. Give it a stir and seal with a lid or cling film. Leave overnight. In the morning, stir and top with grated apple and a few dollops of yogurt.
