Grilled mozzarella and watermelon skewers

BBQ season is the perfect time to gather friends and family and showcase culinary talent. However, it doesn’t have to be complicated to provide great taste and wow your guests. These simple meat free skewers are a must have on BBQ’s this summer!

Nutritional highlights

Watermelon provides a refreshing element to any recipe, and who is to say that they don’t belong on a BBQ. This water dense fruit will keep hydration levels topped up through the (hopefully!) warm weather. Mozzarella cheese offers a great vegetarian protein source whilst being lower in fat than other cheese counterparts such as halloumi. Not only this, it’s high calcium content helps maintain healthy bones and teeth!

Ingredients list

(Makes 4 skewers)
Preparation time: 15 minutes
Cooking time: 5 minutes 

  • ½ a watermelon
  • 1 courgette
  • 1 red pepper
  • 1 red onion
  • 16 mini mozzarella cherries

For the glaze

  • 1 tbsp olive oil
  • Pinch of black pepper
  • 2tbsp fresh lemon juice
  • 1 tbsp finely chopped mint

Method

Prepare the watermelon by cutting into cubes.

Slice the courgette and pepper thickly. Cut the red onion in wedges.

Thread the mini mozzarella, sliced courgette, onion wedges, pepper and watermelon chunks onto the skewers.

For the glaze, add the olive oil, black pepper, freshly squeezed lemon juice and finely chopped mint to a bowl and stir until well mixed.

Preheat the grill (BBQ or grill) and lay the skewers on the rack. Brush with the glaze and cook for 5 minutes, turning regularly or until the vegetables are tender.

Serve with a side salad or other exciting accompaniments you may have at your BBQ!
