Turkey escalopes in tart cherry sauceTart cherry juice may be the secret ingredient for a good night’s sleep. In a small study, melatonin-rich tart cherry juice was shown to aid sleep. When adults with chronic insomnia drank a cup of tart cherry juice twice a day, they experienced some relief in the severity of their insomnia. Turkey is a good source of tryptophan which is converted to the brain chemical serotonin and helps you to feel relaxed and sleepy.

Ingredients (Serves 4)

  • 1 tbsp olive oil
  • 4 turkey escalopes, use a mallet to make them thin
  • 3 shallots, peeled and chopped
  • 2 tsp of butter
  • 50g dried sour cherries
  • 100ml tart cherry juice
  • 150ml red wine
  • 250ml chicken stock
  • 1 cinnamon stick
  • 3 tbsp redcurrant jelly

Method

Brush some oil over a griddle pan or heat the oil in a large frying pan and pan fry the escalopes. Set aside on a plate and keep warm.

Fry the shallots in a teaspoon of butter until softened. Add the rest of the ingredients (apart from the redcurrant jelly) and simmer until reduced and syrupy. Stir in the redcurrant jelly and another teaspoon of butter until melted and glossy. Pour over the turkey and serve with green beans.
