This can leave you prone to constant infections and poor health. Give your immune system a boost with this superfood salad. Pomegranates are the latest food to be given superfood status owing to their high content of antioxidants. Vitamin C and beta-carotene are provided by the tomatoes and pepper, the pine nuts are a rich source of zinc, and olives provide healthy fats and vitamin E – everything you need for super immunity!

Ingredients (Serves 2)

  • 125g Mediterranean-flavoured couscous
  • 1 tbsp olive oil
  • 1 yellow pepper
  • 125g frozen peas
  • Seeds from 1 pomegrante
  • 1 apple, peeled and grated
  • 8 cherry tomatoes, halved
  • 8 black pitted olives, halved
  • 25g pine nuts
  • 100g feta or goat's cheese, diced
  • Fresh parsley, chopped

Method

Make up the couscous according to the packet instructions. Allow to cool and then fluff with a fork.

Add all the other ingredients and toss gently together.

Serve with a sprinkling of parsley.
