Low fat moussakaTry this rich and comforting classic dish without the calories. It is very low in fat and salt, and the addition of the lentils adds extra fibre and wholegrain goodness. Serve with some wholegrain flat breads or toasted pitas and a large green salad.

Ingredients (Serves 4)

  • 2 close of garlic, crushed
  • 1 tsp cinnamon powder
  • 200g extra lean mince
  • 100g red lentils
  • 1 pepper
  • 2.5 tsp oregano
  • 500ml jar of passata
  • 1 large aubergine, thickly sliced
  • 4 large tomatoes
  • 2 tsp olive oil
  • 2 tbsp grated parmesan
  • 200ml 0% fat Greek yogurt
  • Freshly grated nutmeg


Cook the peppers gently in a large non-stick pan for about 5 minutes – the water from them should stop them sticking. Add the garlic and cinnamon and cook for 1 minute more, then add the beef, breaking up with a fork, and cook until brown. Tip in the lentils, 1 teaspoon of oregano, the passata and a splash of water. Simmer for 15-20 minutes until the lentils are tender, adding more water if you need to.

Meanwhile, heat the grill to medium. Arrange the aubergine and tomato slices on a non-stick baking tray and brush with the oil. Sprinkle with 1 teaspoon of oregano and some seasoning, then grill for 1-2 minutes each side until lightly charred.

Mix half the Parmesan with the yogurt and some black pepper. Divide the beef mixture between 4 small ovenproof dishes and top with the sliced aubergine and tomato. Spoon over the yogurt topping and sprinkle with the remaining oregano, Parmesan and nutmeg. Grill for 3-4 minutes until bubbling.
