Boston baked beans Haricot beans - and all other beans, lentils and pulses - are a good source of soluble fibre, which, as well as aiding digestion, can also help to lower cholesterol and regulate blood sugar levels.

Ingredients (Serves 4)

  • 450g harricot beans
  • 1 tsp mustard powder
  • 2 tbsp brown sugar or treacle
  • 2 tbsp tomato puree
  • 2 cloves of garlic, crushed
  • 1 onion, diced
  • 1 bay leaf

Method

Pre-heat the oven to 120°C or Gas Mark ½.

Place the beans in a casserole dish and add all the ingredients, plus 1 pint of water.

Cover the casserole with a lid and bake slowly in the oven for up to 6 hours.

From time to time, stir the beans and, if they show signs of getting dry, add a little more water.
