Boston baked beans
Haricot beans - and all other beans, lentils and pulses - are a good source of soluble fibre, which, as well as aiding digestion, can also help to lower cholesterol and regulate blood sugar levels.
Ingredients (Serves 4)
- 450g harricot beans
- 1 tsp mustard powder
- 2 tbsp brown sugar or treacle
- 2 tbsp tomato puree
- 2 cloves of garlic, crushed
- 1 onion, diced
- 1 bay leaf
Pre-heat the oven to 120°C or Gas Mark ½.
Place the beans in a casserole dish and add all the ingredients, plus 1 pint of water.
Cover the casserole with a lid and bake slowly in the oven for up to 6 hours.
From time to time, stir the beans and, if they show signs of getting dry, add a little more water.
