It contrasts perfectly with the liquorice-y flavour of the fennel, while its crunch complements the soft creamy texture of the avocado. This salad is a real mouth explosion for the most jaded of palettes.

The pink grapefruit is a rich source of vitamin C and the avocado is rich in healthy mono-unsaturated fats and contains plenty of vitamin E, all of which will boost your immune system and keep you feeling healthy.

Ingredients (Serves 2)

  • 2 avocados
  • 1 large pink grapefruit
  • Half a bulb of fennel
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 2 tsp honey
  • Fresh coriander, chopped

Method

Cut the avocados in half, remove the stone and scoop out the flesh.

Cut each half into thick slices. Peel the grapefruit and separate the segments with a knife, catching the juice in a bowl.

Thinly slice the fennel. Place the avocado, grapefruit and fennel in the bowl with the juice and toss together. Make up the dressing by mixing together the lime juice, oil and honey. Pour over the salad and sprinkle on the fresh coriander.
