Rice pudding is quick, simple and inexpensive to make and can be updated health-wise with the addition of plenty of nutritious dried fruit. This is an effective way of adding sweetness so you need less sugar. The milk is a good source of protein and calcium needed for healthy bones. The dried fruit provides important vitamins, minerals and fibre that can help to keep the gut healthy.

 

Ingredients

125g pudding rice
25g dried apricots
25g sutanas
1,200 ml semi-skimmed milk
25g unsaturated spread
1 tbsp custard powder
25g caster sugar

 

Method

Wash the rice in cold water. Drain and put in the top of a double saucepan. Pour boiling water into the bottom of the saucepan and set the other pan on top. Add just enough cold water to cover the rice. Cover and cook gently until the rice has absorbed the water.

Add most of the milk (keeping just enough back to mix with the custard powder to form a thin paste), then stir in the apricot pieces and the sultanas.

Leave to cook over a gentle heat for about an hour, then stir in the unsaturated spread.

In a bowl, stir the remaining milk into the custard powder and add the sugar. Pour this into the rice, stirring thoroughly. Cook for a further 10 -15 minutes until thick and creamy.
