Make sure you use the ripest tomatoes you can find so there are plenty of juices; these are retained in the foil and are delicious. Halibut is a low-fat fish that is a good source of protein and provides important minerals such as zinc and iodine. The recipe works well with salmon or trout fillets, too.
Ingredients
2 skinless fillets of halibut
2 tomatoes, chopped
4 spring onions, trimmed and cut on the diagonal
1 red chilli, deseeded and shredded
1 carrot, peeled and cut into julienne strips
Juice of 1 lime
1 tbsp soy sauce
Few sprigs fresh coriander
Method
Preheat the oven to 220°C/Gas Mark 8.
Place each fish fillet on a sheet of kitchen foil and lay both on a large baking tray.
In a bowl, mix the tomatoes, spring onions, chilli and carrot. Pile half of the mixture on top of each fish fillet. Drizzle half the lime juice and soy sauce over each fillet, then wrap over the foil to make a parcel. Bake in the oven for 15 minutes.
Once ready to serve, scatter over the coriander. Green beans make an ideal accompaniment.
