Lamb koftas served with flat bread, tzatziki and feta salad

The key ingredients in this meal are garlic, olives and olive oil. Garlic is thought to have antiviral and antibacterial properties, so may help to boost immunity. A daily dose has been shown to lower both blood cholesterol levels and blood pressure, which is good for your heart. Olives and olive oil are rich sources of monounsaturated fats, which can also help improve heart health. The lamb and feta cheese provide plenty of protein and are good sources of well-absorbed iron and calcium, respectively.

 

Ingredients

200g lean minced lamb
1 tsp cumin
1 tsp ground coriander
1 clove of garlic, crushed
1 tbsp fresh mint, chopped
Half a red onion, chopped
2 large tomatoes, diced
Quarter of a ccucumber, diced
50g feta cheese, diced
10 black olives, halved
Olive oil to drizzle
Juice of half a lemon
2 tbsp tzatziki
2 flatbread

 

Method

Mix the minced lamb with the cumin, coriander, garlic and chopped mint. Mould the meat onto a couple of skewers and place under the grill for 10 minutes.

While the koftas are cooking, make the salad by mixing together the onion, tomatoes, cucumber, feta and olives. Then drizzle over a little oil and lemon juice.

When the koftas are ready, add a tablespoon of tzatziki to each flatbread, and serve with the salad and koftas.
