Salmon is a very nutritious food that is high in protein and rich in healthy omega 3 fats. Omega 3 fats can help to reduce inflammation in our bodies, which has been identified as being a root cause of many health problems, including heart disease, diabetes, some types of cancers and arthritis. Omega 3s also help prevent the blood clots that cause many strokes. Salmon provides plenty of vitamin D, needed for good bone health, as well as B vitamins, magnesium and selenium.

 

Ingredients

100g tamarind puree
2 lemongrass stalks, sliced
1 red chilli, deseeded and finely chopped
1 piece of root ginger (3cm), grated
3 tbsp honey
1 tbsp soy sauce
Small bunch of mint, chopped
700g piece of salmon
Small bunch of coriander

 

Method

In a small bowl, mix together the tamarind, lemongrass, chilli, ginger, honey, soy sauce and mint.

Place the salmon on a greased piece of foil or a banana leaf. Brush a thick layer of the sauce over the salmon and BBQ for 10 minutes.

Serve sprinkled with coriander and a bowl of extra marinade on the side for dipping.
